Manchego, Spain’s most famous cheese is produced in LaMancha. The rocky, hilly terrain of the central region of the country is perfect for goats and sheep, while cow’s milk is in short supply. The terroir is abundant with wild herbs which give Manchego its special taste.
The cheese is zesty, exuberant, firm and buttery and is easily recognized by zigzag rind and slightly porous paste; perfect with Cabernet and Syrah wines.
Shooting Star Syrah 2006
After many years of close observaation, Jed Steele decided to plant Syrah in Lake County, California. This decision has been affirmed as each vintage hasproduced great fruit. All of the grapes are hand-havested and quickly delivered to the winery. Fermentation lasts 6 to 7 days and the grapes are on the skins for an additional 10 days. The wine is bottled early and meant to be consumed young. The 2006 Syrah is jammy and exhibits a palate of fresh plum and raspberry with moderate tannins.
